The classic iced tea done right, five drinks worth photographing, and four desserts your freezer and dinner guests will thank you for. Every recipe starts from the same base brew and the three milks of Thai tea.

Brew it street-stall style: steep 2 tablespoons of tea in hot water for 3–5 minutes until deep amber, then strain — a fine mesh strainer works, and if a traditional cloth filter came with your pouch, even better. Stir in condensed milk, pour over a full glass of ice, and crown with evaporated milk. Don't stir — the swirl is the signature.

Got the cloth filter? Rinse it with hot water only and hang it to dry. It will stain amber over time — that's the badge of a real Thai tea brewer.
